The profile of our Chef
This Chef, originating from the Tours area, learnt the tricks of the trade from some of the greatest chefs in France, such as Thierry Marx at Cordeillan Bages and Michel Troisgros in Roanne.
In 2007, Jérôme Roy joined Pierre Gagnaire at the Les Airelles restaurant in Courchevel. With a year’s experience and partnership now under his belt, Jérôme was entrusted by Pierre Gagnaire to open his restaurant at the Lotte Hotel in Seoul.
This young talented chef has also worked at the Colette by Pierre Gagnaire restaurant at the Sezz Hotel in Saint-Tropez.
Having decided to stay in the sun, he has been working in Giorno’s Provence, among the centennial olive trees, since 11 June 2012, in the kitchens at the Couvent des Minimes Hotel and L’Occitane Spa, an amazing place, and a veritable haven of peace.
The Chef’s cuisine can be sampled both at our gastronomic Cloître restaurant and the gastronomic Pesquier bistro.
Creativity and emotion
Jérôme Roy, our chef, opens the doors to a place that is both convivial and intimate, where well-being and flavours cohabit in perfect harmony.
His belief is that the product should be allowed to express itself, adding just enough creativity to provoke pleasure and surprise. An expert in delicate and refined gastronomy, with a Mediterranean accent, Jérôme Roy masterfully combines perfumes and flavours, while upholding a perfect respect of the local produce, adeptly preserving its authenticity. Jérôme Roy finds a wide range of herbs in his vegetable garden, combining flavour and tradition, which allows him to give his imagination and talent free rein. Nature has always been a big part of life at the Couvent des Minimes. Since Louis Feuillée, Louis XIV’s botanist, who studied there, to the Franciscan Missionaries, who passionately grew fruit trees and vines, the gardens and terraces have preserved their outstanding beauty to the present day.
