A touch of daring characterises Chef Louis Gachet's refined, plant-based, seasonal cuisine.

Drawing on the exacting techniques he has acquired throughout his career, Chef Louis Gachet dares to combine flavours in the most unexpected of ways, giving pride of place to vegetables, fruit and flowers, and using citrus to add texture and freshness, and to soften and surprise.

The wine cellar

The choice of local wines has been made by Florian Nédélec, the restaurant's Head Sommelier.

Wines from the Var and Provence regions feature prominently on the menu, with a careful selection of vintages from the region's finest domaines.

Wonderfully subtle accompaniments to enhance the Chef's cuisine.
